Easy Pigs in a Blanket Recipe: What I'm Makin' Monday

Don't laugh. I know this is like, prior to cooking 101 but this was still exciting to me, ok?

I had never made pigs in a blanket before until this last week. I have eaten them before and figured they couldn't be that hard. Possibly something even I couldn't mess up.

I found a little package of mini sausages and decided to give it a whirl.

Look, I'm not one of those people that can just pick up random seasonings and make things taste remarkably fabulous. Heck, I just recently learned what paprika and bay leaves were.

Don't worry, neither of those were used in this masterpiece.

All I used:
One pack of mini sausages (I didn't use them all)
A can of crescent rolls
American cheese

Then I took one photo of  three steps I took. 

1. Cut the crescent rolls from their pre-sliced size down in half/ thirds so they're smaller.
2. Place the cheese and sausage on the dough.
3. Roll.

4. Bake according to crescent roll directions.

Easy as pie! No... Easier!

Lil' J loved eating them while I was making them, so much so she was full of sausage and cheese before these were even out of the oven.

I packed some in her lunch the next day and she kept snatching on those things. As did my husband and I.

This may or may not have been the only thing I cooked myself all week. *sigh* I'll do better.

Hopefully this so-easy-a-dummy-could-do-it recipe can help another non-foodie like myself try something new.

Dried Baby (and Daddy) Snacks: What I'm Makin' Monday

I didn't get a chance to finish my fun crafts this week so I'm sharing some dried snacks I made.
I had some bananas that were turning brown, some apples we needed to eat, and strawberries I wanted to try dried.

Apparently drying fruit is a great way to keep the good vitamins in food, and it's a less-messy snack. So I dusted off my old dehydrator (literally, as you'll see from this photo it needed a little TLC!) I bought as a wedding gift with gift cards but hadn't used in years.
I didn't even remember how much these things are but I just looked it up and they're like $50 on Amazon. Worth it if you like to make your own dried fruit, veggies, jerky, or fruit roll ups!

I sliced all the fruit into small pieces. I peeled some of the apples, but not all, just to see which way I liked it more.
Then I placed them all on the dehydrator trays and set it to about 135 degrees, and left it overnight (about 7-8 hours).
My husband turned it off in the morning and helped himself to some bananas. It was fun and easy to make and Lil' J loved it all too.
(We had just woken up and gone downstairs to go try some for breakfast so don't judge her non-prissy state).

The only thing that kinda sucks about it is that even though I fill up all of the trays with fruit, the yield is so small after it's all dried.
My husband wants me to make a huge batch of bananas soon, so I may try again and see if I can stack the fruit on top of one another.

My plan to shed pounds

Nine months and counting. That's how long I've been breastfeeding and with all of the raving about it helping to lose pregnancy weight I thought I'd be back to my pre-baby size by now. And last week I did something I never in a million years thought I'd do.

My husband and I were walking around the mall with our daughter. He was pushing her in the stroller as we passed Victoria's Secret. I looked at the huge poster hanging from the display window of a beautiful Victoria's Secret angel and said "I wish I was that skinny."

This is a stark contrast from the young girl who growing up hated being skinny. I got made fun of, called names, and hated when I was photographed. In middle school I was sent to the guidance counselor because someone accused me of having an eating disorder.

In high school boys didn't like me as much because I didn't have "enough meat on my bones."
When girls in college told me they were jealous of my size I told them not to be. That it was a curse more than a blessing, and that I would trade in a second if I could just gain some weight.
I had never looked at the models with envy and longed for their tooth pick figures, and wondered why anyone else would want that.

I can most definitely testify to the grass being greener on the other side. And now here I am on the other side. Gaining weight wasn't easy when I was skinny, and loosing it isn't any easier. But with determination, bit my bit I'm getting there, and I'm hoping to stay on top of it.

I've found myself uncomfortable in my own skin at times. I'm not wearing makeup as much, and I'm skipping buying clothes for myself so my daughter can have more. Meanwhile I'm stuck avoiding my stretched-out maternity clothes, and pre-baby clothes I can't quite squeeze into until I lose the baby weight.

I'm too scared to step on a scale. My fear stemmed from my husband buying a scale recently, and naturally, I wanted to weigh myself. I weighed only five pounds less than my highest pregnancy weight.

That can't be right. I thought. To this day I don't think it was because it also put my husband at ten or so pounds heavier, and it never seems to zero out (it's one of those arrow-spinning scales). But I'm still avoiding weighing myself. Weight is such an arbitrary number anyway right? Who cares how much I weigh?

More than weight I think I just want to be able to buy clothes in a size I'm comfortable wearing, and be able to just feel confidant again. I told my husband I don't feel attractive and he told me it's all about confidence. It wasn't exactly the reaction I was looking for but it was probably the one I needed to hear. When you feel good about yourself I think others can tell.
So what am I doing to feel more confidant?

1. Well, I'm still on the hunt for skinny jeans. I tried on a few pair at the mall (luckily before I walked past the skimpy lingerie store and got green with envy) and it was quite the work out! Getting them on and off my calf and ankle was seriously strenuous. So far I REALLY like the Old Navy brand, and the price is right, but I'm still wanting to try a designer brand to see if they fit or feel any better. I want to hit up Ross--One of my favorite stores and get some new tops that fit me, and don't hang like maternity shirts.

2. I want to keep cooking and eating better. I like to blame breastfeeding for me hanging on to extra baby fat like a reserve for my daughter, but I also had to blame myself. I was eating out way too much and my metabolism isn't what it used to be. I'm making at least three dinners a week now which is more than ever in my entire life. *Pats myself on the back*.

3. I signed up for another yoga class with my workout buddy (pictured below). Now that Lil' J is older she can crawl around and play with the other babies while i get more of a workout. We just registered for another eight week class.

I also will do cardio, either at home, running, or stroller strides--something I'd still like to try. I love spending time with my daughter and I'm trying to keep her with me as I cook and exercise--1. So I have company and 2. So she can see what it's like to live a healthy life starting at a young age.

3. I'm going to apply makeup, even if it's just lipstick and eyeliner outside of work. I want to look nice off-air too.

And finally, 4. It's a total shot in the dark but I'm trying a postpartum weight loss supplement. I figure what the heck, it couldn't hurt, it has fenugreek and other vitamins in it which help with milk production (I've noticed it working in that department) but it's also suppose to help with fat burning. I'm normally not a sucker for these types of things but I figured I'd try it and see how it goes. I'll let you know. But I imagine with a combination of a healthy diet and exercise routine, I should notice some improvements.

What I'm Making Monday: Food (Can you freakin' believe it?)

If I had to choose my punishment and my two options were either getting punched in the stomach or cooking for a week, I'd get it over with and take the hit.--Because the pain wouldn't last as long.

Cooking is a form of domestic torture for me, but I've challenged myself to take it like a woman and just do it.

Last year a company called E-Mealz approached me about trying their program out. You sign up and get a three-month subscription for menus to the grocery store of your choice, and you get a PDF each week with a grocery list of items, plus a corresponding menu that goes with it, and directions on how to cook it. All on two pages. Each week groceries for my family cost about $41 or less. Mind you these are dinner menus (entree and side), not including breakfast and lunch, but since it was just the two of us, I figured we'd have leftovers and that it was a good deal.

I got a free month subscription and printed out the menus (I really wish they emailed these things cause it's hard for me to remember each week) but never used them to shop and cook with. I lost the menus and forgot about the website.

... Until about a month ago when I was realizing Lil' J wants to eat EVERYTHING I eat, and it's probably not the best to be giving her my french fries and frozen burritos. I was desperate, and tired of cooking spaghetti. My time is up. I need to cook and I need to learn NOW.

I searched through my emails and reunited myself with the website. I paid the $15 for a 3-month subscription and printed out the menus for the current week and the previous week.

I looked them over to see what I'd be making and shopping for the next day. None of the meals on the menu were things I had made before (or heard of). GULP.

The next day we packed up the baby and headed to the grocery store. I gave my husband a portion of the list to shop for and promised to do the rest. Now the nice thing about the way the shopping list is set up is that it breaks it down by area of the store: Produce, Meat, Dairy, etc. So I'm not walking back and forth across the store getting another item from the area I just left. It also says the price of each individual item so if all else failed I could look at prices before the item name to find a match. If only they had what isle number each item was in, then I'd be SET!

Anyway, sadly, even though it's near-fool proof, it till was still a little difficult for me.

"Yellow squash" I read from the list. I walked around and around and around the produce section looking for it but I couldn't find it anywhere! I actually didn't even know what it looked like. Luckily, I had my iPhone (thank goodness for Google images), and a store clerk who were able to rescue me and direct me to this foreign food.

"Nutmeg," I read a ways down the list later. I had never heard of this before and had to phone a friend aka "twitter" to figure out what it was and where it should be. After the swallowing the sticker shock for a simple spice ($6, are you kidding me?!) I was about done with my first week of shopping.

The first dinner I made was four cheese pasta. Except I made it with three cheeses because we didn't have the staple "Parmesan" cheese that was left off the shopping list. I noted to myself to check out what the staple items were next time because unless it was bananas, cereal, or Cheetos, we probably didn't have it.
I wasn't expecting to like this dinner because it had spinach in it and I don't like spinach, but I really couldn't taste it. My husband liked it too and even ate the leftovers the next day! Lil' J of course liked it as well. Here she is eating that sneaky squash.
 A few nights later I tried making another menu item--Some kind of hashbrown casserole. It had mushrooms in it, which my husband doesn't like so I only put it on my half. I LOVED this!
Neither item took very long for me to make, and on days where I forget to pop something in the slow cooker, these meals were easy to do last minute, plus I had already bought the grocery items for them.

I just went shopping for another week of groceries and now our freezer is full of meat, and things I haven't made yet but I've promised to cook at least three or four nights this week. My husband has offered to help too. We are both learning together so hopefully there will be a few things he likes to make and a few things I like to make.

My plan is to circle/star the menu items we really like during our three month subscription, and save those in our recipe box, then X the ones we don't like. But for now, we're open to trying anything.

Creating a shopping list and looking for groceries I've never had to buy before has been a bit scary but it's getting a little easier each week. I wanted to share this for my first What I'm Making Monday: COOKING ADDITION! Hopefully there will be many more in the future.

Baby Food Making 101: I Freaking Did it!

sI’ve already cooked more these first three weeks of the year than I did all last year combined.

Before this week I had never bought a squash or a pot roast before. But I bought and made both last night.

This is a big accomplishment for me. HUGE. I am conquering my fear of the kitchen.

How?

Well, a few ways. For one, I dusted off a fabulous wedding gift--My crock-pot--And put it to use.

I also owe part of my thanks to my iPhone. I downloaded the All Recipies app so I could have all of my recipes on my phone with shopping lists etc etc, plus get ideas because I’m not one of those people who can just look in my cabinet and know what it can make (but last I checked there weren’t recipes including Cheetos, Twizzlers, cereal and rice anyway).

The extremely daunting part of cooking for me is finding the ingredients at the store, so I emailed screen shots of the shopping list to my husband (who now also has an iPhone) so he could grocery shop with our daughter while I was at work, and I could cook it in my crock pot the next morning. This was how I cooked last week. I made chicken, and beef stew.

One thing he couldn’t find on the list was the top sirloin pot roast, so I looked for it at the store a couple of days ago. I had to phone a friend (aka my mother in law), to figure out which kind I wanted and decided on the rump roast.

Then I headed over to the produce isle. I wanted to buy a squash because my daughter loves the NuturMe squash I bought plus I just got this in the mail, and my friend gave me this book as a baby shower gift, so I wanted to try to make baby food myself dangit!

I didn’t see an organic option for squash so I went with the non-organic in hopes that it’s not so bad. Organic baby food or homemade puree? I’m not sure which is better. I'm hoping the latter since I'm going through all of this effort!

Did you know squash is a dang big vegetable? I didn’t. Each looked like they could feed her for a year. It was a dollar something a pound and the small one I picked was nearly three pounds so it cost us about four bucks. It had better last awhile. I thought to myself as we rang it all up.

After putting the pot roast dinner in the crock-pot and getting Lil’ J down for a nap I got to work on her squash. The directions that came with my baby food processer recommend making 1/3 the squash, so I chopped up a third of it, realized I need to peel it too, so I chopped the ends off. Then I put it in the processor, pushed the steam and blend button and let it do the rest of the work. But what do I do with the rest of the squash?
I was going to wrap it in foil and stick it in the fridge but then I realized it would probably save me a lot of time if I just made it all at the same time (am I smart or what?). I posed the question on twitter and got several ideas for how to cook the rest. One mom suggested an easy oven steam recipe.

I cut the squash in half long ways (and discovered a pumpkin-looking inside, who knew?!) scooped the seeds out, then placed it in a glass pan and filled it with water (I flipped it over after this picture).

Put it in the over at 400 degrees for 40 minutes.

When it came out it was super soft. For about 2/3 of it I scooped it out and pureed it, and put it in ice cube trays to freeze for later (I've heard you can reheat it easily by warming it with water, breastmilk or just in the microwave). 
The other 3rd I sliced up, peeled off the skin, and set it aside for dinnertime and future meals where she may want to feed herself or what many people call "baby lead weaning" but I just call "feed your dang self."
I mentioned before trying a bit of this method as well as and purees, and tonight I let her eat the squash I had steamed and cut while we ate pot roast. She seems to like it (and broccoli we were eating). She sits on the table for now cause she doesn't have a high chair yet but I'm thinking of getting one of these space saver chairs for her from CSN.

And me? I feel like a Domestic Goddess! (Remember, I made pot roast too... I'm seriously on a roll).

I just bought my first sweet potato and I'm going to go at it again!

My (not so) Secret Cheese Dip Recipe: What I'm Makin Monday

I'm not a cook by any means, but I'm learning ok?

So when I offered to help out with some snacks for a friend's baby shower I was reluctant to choose anything I'd have to make.

I read off the list of my options to a friend at work.

"Fruit or veggie platter, chips and queso, cake..."

My friend suggested I take the the chips and queso because it's not hard to make, and it's inexpensive.

At first I was intimidated by the idea of making something myself, but she told me a secret recipe with only two ingredients: Velveeta cheese and two cans of Rotel.
GENIUS. I thought. I'd make this yummy dip and everyone would think I spent an hour slaving by hand to make it so tasty *evil laugh*.

Little did I know my secret recipe wasn't so secret after all. In fact, the husband of the mama-to-be made that very same cheese dip when we visited them days before the shower.

Then at the shower, when I was running late and resorted to making the cheese dip at the party, all the ladies oohed and aahhed about it being their favorite way to make a sauce for chips.
So, it may not be top secret, in fact, I believe I saw the very recipe on the side of the Rotel can. But I still got to feel like a cook for 30 seconds, nonetheless.

I'm going to work on cooking more next year. I say this every year but I'm REALLY going to work on it this time! I have a game plan. I'll decide what I'm making, give my husband a grocery list, and he'll buy the stuff I need while I'm at work. Then I'll cook when I get home. Finding the ingredients at the store is half my battle. So maybe if I make him do that part I can conquer the kitchen.

Another challenge for me is finding recipes I like and can understand. I'm going to resubscribe to E-Mealz and pull your submitted recipes from here (link also now in my sidebar). Lactation Cookies: Show Me What You're Makin' Monday

That's right. Lactation Cookies! No, they're not made with breast milk but made FOR breast milk. I heard of these way back when, before I was even pregnant. I remembered them a couple of weeks ago when I started to worry a little about my supply. It's been up and down a little since I've been back at work and I kinda have been thinking I'd try a few easy things that could help. And what better excuse to eat cookies?

I looked up my previous post on the topic and found Hardier Lime's shop and bought mix for a dozen oatmeal raisin milk enhancing cookies! I think it was only like $8 for a dozen, not bad!

Believe it or not I didn't have vanilla so it took me a week or so to get around to buying some, then another week before I got around to making them. Today was the perfect day since I was down in the dumps about spilling a bottle of breast milk after pumping *sad face*.

I just started taking an herbal supplement with feungreek (more on that later) and I thought these cookies would not only cheer me up, but help as well.

The instructions were super easy and I never, and I mean hardly EVER (maybe once every few months) bake. So I was so happy with how quick and easy these were. It normally takes me reading the directions time and time again to make sure I don't screw it up, but even with me reading these 5Xs it only took about 20 minutes total to make, including the 8-10min baking time.

I just took them out of the oven and took a bite and they are SOOOO yummy!
